POT POURRI (by Courtesy of Lady Dunning, Johannesburg):
At the beginning of the rose season obtain a new gallon stoneware jar with a well-fitting cover. Gather daily about 10 a.m. (in dry weather only) any dark red or cabbage roses that you can. Lay out to dry in a window, carefully removing centres, stalks etc. Leave for half to one hour, but on no account shrivel the leaves. Then place a layer of rose leaves in a jar, then a layer of salt. Continue until the daily supple of rose leaves is exhausted. Thoroughly stir the contents of the jar daily with a wooden spoon before adding fresh rose leaves. The mixture must be stirred daily whether you add rose leaves or not., and the lid kept closed. When about 7 or 8 lbs. rose leaves have been collected, give a final stir and leave for 3 days, jar closed. It is understood that the jar has been standing in a warm window all through. Now take a large earthenware bowl, and into this place the rose leaves, which must be squeezed as dry as possible, a handful at a time from salt pickle in the jar. Add to the leaves the following, first rubbing in the spices, powders etc. and then the essences:
Three oz. Powdered orris-root, half oz. Powdered cloves, half oz. Powdered allspice, half oz. Powdered cinnamon, one powdered nutmeg, two oz. powdered storax, rind of four lemons cut thin, dried and powdered, one grain of musk, one dram each of essence of lavender, bergamot, tuberose, oil of cassia, violet, jasmine, six drops attar of rose. Throw away pickle from the jar while quite dry, but do not wash the jar; place pot-pourri in it, closely cover, and tie down with bladder or brown paper. Place in a warm dry room, but not in the sunshine; in three months it will be ready for use. This is most delicious and keeps good for years. A very old English recipe.
Fanny Farmer’s Cookbook was the well used property of Mrs. Harry Otto of Ixopo (Muriel Alexander). She was born at Zeerust in 1887 and married in Johannesburg in 1910.
